PEACAN CRUSTED SALMONUser Submitted Recipe
4-8 ounce salmon filets (skinned)
2 Cups milk
1 Cup pecans (finely chopped) (the magic bullet does it the best)
1/2 Cup all-purpose flour
1/4 Cup packed brown sugar
2 Teaspoons seasoning salt
2 Teaspoons black pepper
3 Tablespoons Vegetable or olive Oil
Place the skinned salmon filets in a resealable plastic bag. Add the milk. Let stand for 10 Minutes. Drain but don't dry.
In a shallow bowl, combine the pecans, flour, brown sugar, seasoning salt and pepper. Coat the filets with the pecan mixture, gently pressing it into the fish. In a large skillet, brown the salmon in oil over medium/high heat.
Transfer the fish to a baking or cookie sheet. Preheat the over to 400 degrees. Bake the salmon for 8 to 10 minutes or until the fish flakes easily with a fork.
