1 lb Hot Italian Turkey Sausage (1/2 inch slices)
1 Quart fresh sliced mushrooms
1/2 red onion (diced)
1-Tbsp basil pesto
2oz package crumbled feta w/tomato and basil
4oz shredded mozzarella cheese
1-cup fresh chopped spinach
1 jar Barilla spaghetti sauce
2-cups uncooked Penne Pasta
In a large non-stick saucepan over med-high heat combine sausage, red onion and mushrooms until sausage is cooked, mushrooms and onions are tender.
Reduce heat to simmer, add Barilla spaghetti sauce, cover and simmer for 20 minutes.
While simmering cook the penne pasta and set aside.
After the 20-minute simmer, stir in the basil pesto then remove from heat. Fold in the feta, fresh spinach and mozzarella cheese and immediately serve over the penne pasta as the cheese starts to melt. This keeps the spinach fresh and crisp. Enjoy!!
