Auntie Mindy’s Stuffed Ham and Blue cheese MeatloafUser Submitted Recipe
4 ½ lbs. ground chuck
1 lb. sweet sausage
2 c. Italian bread crumbs
½ c. beef stock
¼ c. Worcestershire sauce
½ c. Heinz Catsup
½ green pepper diced small
1 medium Vidalia onion diced small
2 large stalk celery diced small
1 tsp Cumin
1 tsp Smokey paprika
1 tsp kosher salt
1 tsp fresh ground pepper
1 T. Liquid smoke
2 (14.5 oz.) can of hunt’s diced Italian style tomatoes.
½ lb. sliced thin baked ham divided
½ lb. Blue cheese crumble divided
Preheat oven to 350 degrees. Prepare a large baking dish by lining with foil and spray with Pam. In a large bowl mix together ground chuck, sweet sausage, bread crumbs, beef stock, Worcestershire sauce, catsup, eggs, green pepper, onion, celery, cumin, paprika, salt, pepper, liquid smoke, until well blended. I put plastic gloves on and use my hands to make sure it is mixed well. Wet 2 clean dish towels and lay flat. Divide you meat mixture into two equal parts. Flatten the meat out onto the wet towels. You want it to be almost as long as the towel. Mold it until it is about 1 ½ to 2 inches thick and long. Now lay down ½ of the ham stretching from one end to the other, now take ½ of the blue cheese and crumble it onto the ham. Now using the towel pick up the end and begin rolling the meat. Make sure you are rolling tight. When done it will look like a pin wheel. Then repeat with the other loaf. Place finished loafs into pan and pour a whole can of tomatoes onto the top. Then cover with foil and bake for 1 ½ hours. Then remove foil and bake for about 10 more minutes. Please keep in mind all ovens cook differently. When you push on top of loaf it should be firm, not hard.
