Mexican Taco Casserole

This layered Mexican casserole is spicy and cheesy, and easy to prepare. Can be made ahead for a quick but flavorful dinner anytime. "


3 lbs ground beef, lean
1 onion, chopped
1 can tomatoes with green chilies
1/2 pound processed American Cheese
1 can chicken and rice soup
2 packages taco seasoning mix
1 large bag tortilla chips
1 can cream of mushroom soup


Add onions to browned and drained beef. Cook till onions are tender. Add tomatoes, soups and taco mix. In large casserole dish sprayed with a non stick coating layer half of chips, meat mixture, and cheese. Repeat layers. Bake at 350 for 30 minutes, or until heated thoroughly.
