Chicken Especial

4 Chicken Breasts (boneless, skinless, cubed)
2-3 tbs. Butter
4-5 cloves Pressed Garlic (or to taste)
4-6 oz. Mexican Beer (optional)
S&P
Cilantro (optional to taste)
3 c. Jack cheese
1 c. Jalapeno Pepper Jack
3 Ripe Avocados (cubed)
3-4 Tomatoes (cubed)
Instructions
-Preheat oven 375 degrees
-Brown garlic in butter. Deglaze w/ beer, add the chicken. Cook open 15 to 20 minutes or until done and tender. (It is best not to let the chicken boil too much as this will toughen the meat) Salt & pepper to taste and add optional seasonings, (cilantro), as desired. This is the TLC part that makes the meal "especial". :)
-In a 9X13 glass casserole dish layer a thin amount of cheese. Top with one third of the chicken, avocado, and tomato. Continue to layer with the cheese, chicken, avocado, and tomato evenly, adding small amounts of sauce left from the chicken. (Caution, too much and the dish will end up runny) Finish with a layer of the Pepper Jack.
-Bake in the oven 20-25 minutes until top is bubbly and slightly browned. Serve hot, on warmed plates with flour tortillas, Spanish rice, and beans.
