Old Fashioned Roast

Old Fashioned Pot roast with veggies "


3 lbs beef chuck roast
3 tablespoons olive oil
3 tablespoons flour
1 cup buttermilk
1 cup beef broth
½ teaspoon thyme leaves
6-8 carrots
1 head cauliflower
1 head broccoli
1 large onion


Season flour in a plastic bag with salt and pepper mix
Cut roast into chunks place in the bag and mix well
Heat oil in skillet brown meat on all sides and set aside
Add beef broth, butter milk, thyme, salt, pepper; cook until it thickens -10 minutes
Place Roast in pan cover with onions place carrots along sides pour sauce over meat Cover and bake 350 for 1 1/2 hours, add flowers from broccoli and cauliflower and cook longer until veggies are tender
