Tinga

A spicy chicken and tostada dish!"

Ingredients

4 whole chicken breasts
1 small can of chipotle chilies in adobo sauce
1 can of Pepsi or Coke
1 large onion
4 garlic cloves
2 chicken broth cubes
6 roma tomatoes
1 package of favorite tostadas
olive oil
1 tbsp of salt


Instructions

Boil all chicken breasts in a large pot.
Slice the onion into thin strips. Add tomatoes, cubes, chilies, soda, garlic, salt, and a few strips of onions into the blender and blend for about 5-10 minutes or until completely blended.
When chicken is fully cooked remove and let cool. Save the water in a separate bowl for later.
Add the onions into the pot and coat in oil. Cook until the onions are clear. Shred the chicken into thin strips. Add chicken to the onions and fry the chicken for about 10 minutes. Add more oil if needed.
Add the mixture in the blender to the chicken and onions. Add some of the water from the chicken to the pot until it is a soupy consistency. Let boil for about 20 minutes or until it is the consistency of a thin sauce. If it is too spicy add more soda and water from the chicken.
Eat with the tostadas.
