Honey Mustard Crunchy Chicken Strip Fiesta

Crispy Chicken Strips with Honey Mustard and Chopped Tomato Topping "


2 lb. boneless chicken breast
2 eggs
1 large container of honey mustard
2 large fresh tomatoes
bread crumbs
olive oil


Slice chicken breasts into strips. Crack eggs and scramble. Dip chicken strips into egg and then into bread crumbs. Place on olive oil baking sheet and bake at 350° for 20 minutes. Drizzle honey mustard sauce and chopped tomato and bake another 15 minutes. MMMMmmm
