Pork Loin Loaf

A yummy loaf to make from ground up leftover pork loin. "


(made from left over pork loin roasted in oven)
2 pounds leftover pork loin (after roasting)
3 eggs
1 cup Italian bread crumbs
1 large onion, chopped
1 cup ketchup
1 bell pepper, chopped
1 teaspoon liquid smoke


Using the meat grinding attachments on your Cuisinart Stand Mixer, grind 2 pounds of leftover pork loin Combine all ingredients and mix well. Place in a baking dish, sprayed with Pam and bake 45 minutes (till heated through and onions are still crunchy.)
