Roasted Italian CasseroleUser Submitted Recipe
Salt and pepper and garlic powder to taste
2 Tbsp spoons of olive oil.
6 links of sweet Italian sausages
2 med. zucchini
1 med. eggplant
1 small onion
1 can drained cannelini beans
1 pound cooked penne or rigatoni
6 oz. shredded smoked Mozzarella cheese
1 can diced tomatoes
On a hot barbeque, grill sausages.
Peel eggplant and slice all vegetables in round slices. Season vegetables with oil, salt and pepper, garlic powder to taste. Then grill on grill until tender.
Chop all the sausage and vegetables in bite size pieces. Place in a casserole dish.
Add can of beans and chopped tomatoes.
Mix together then add cooked pasta
Cover and heat in oven or microwave and eat up.
