Avocado Stuffed Meatloaf

Growing up in Southern California, my mother and I came up with this recipe together years ago. We were trying to figure out how to spice up an every day meatloaf and use my grandmas avocados out of her own back yard. Personally I like spicy food. So, when I make it I use my favorite HOT salsa and I use pepper jack cheese. This recipe is easy to make a few changes to and make it your own. "


1.5 lbs ground beef
1/2 c your favorite salsa
3/4 c bread crumbs
1 egg
1 pckg Lipton onion soup mix
1 sm can of diced green chilies
1 tbls of yellow mustard
2 tbls of Worchesheir sauce
Black pepper
2 ripe sliced avocados
1 to 2 c already shredded Mexican cheese mix.
another 1/2 c salsa


Mix all ingredients together except for the avocado, jack cheese and last 1/2 c of salsa. Separate meat mixture into eight equal amounts and make thin hamburger patties with each. Place one patty down on a cookie sheet and lay three to four avocado slices in the center and top with a mound of jack cheese. place another patty on top and mend the sides together well. Repeat with the rest of the patties. Bake at 375 for 20 minutes. Pull out meatloaf’s and spoon on top of each with a tablespoon of salsa and sprinkle with cheese. Place back in the oven for 15 minutes. Let it set for about 5 minutes before serving. Enjoy!
