Skinny Huevos Rancheros

A healthy version of Huevos Rancheros using lots of veggies with refined carbohydrates unlike the traditional version, and healthier fats"


2 small zuchinni
1 large red bell pepper
1 red onion
1 tablespoon olive oil
1 teaspoon cumin (optional)
salt & pepper to taste
1 can black beans
5 eggs
pepper jack cheese, shredded
1 avacado, sliced
low fat sour cream


Cook black beans: Open black beans (if you prefer less sodium in your diet rinse with water until water runs clear) put in small saute pan, add some water in the pan if beans have been rinsed (I prefer to not rinse the beans, they taste better not rinsed). Turn pan on med-low to heat beans.
Cook Vegetables: Peel zuchinni, half, then quarter and slice into quarter inch slices. Core red pepper, then julienne. Slice red onion into thin slices. Heat olive oil over med-high heat in large skillet and add vegetables, salt, pepper and cumin. Saute until soft and onions are clear.
Prepare eggs: crack eggs into a large bowl and scramble, add some more salt and pepper to taste if needed. When vegetables are thoroughly cooked, add eggs to vegetables and cook until mixture until done.
Serve: first plate beans in a soup bowl then add egg/veggie mixture, top with some cheese, avacado slices, a dollop of sour cream and a spoonful of salsa. YUM!
