Tortilla-Salsa Meatloaf

This meatloaf is a hearty dish served anytime. It also makes a super, cold, meatloaf sandwich. "
Ingredients
2 slices day-old white bread
2 eggs lightly beaten
1 cup salsa
½ cup crushed tortilla chips
½ cup celery
½ cup green pepper
½ cup onion
1 jalapeno pepper, seeded and chopped
6 garlic cloves, minced
1 tsp pepper
½ tsp Italian seasoning
¼ tsp salt
1 lb ground beef
1 pound of ground pork
Instructions
Place bread in an ungreased 9x5x3 loaf pan, set aside.
In a mixer, use paddle and combine all ingredients mixture is well combined.
Place mixture over the bread in the loaf pan and bake at 375 for 1 ¼ to 1 ½ hours or until no pink remains and meat thermometer reads 160.
Invert meatloaf and discard the bread, let stand 5 minutes and serve with garlic mashed potatoes.
