Stuffed Pork Loin

Ingredients
1 1/2 lbs pork loin
1/4 cup sliced shitake mushrooms
1/2 jalapeno
2 tbsp shallots
1 tbsp cilantro
2 tsp garlic
salt
pepper
Italian seasoning
olive oil
clarified butter
Instructions
Butterfly the loin so it opens like a book.
Grill jalapeno until black and then peel off the black skin.
Chop shallots, jalapeno, garlic, mushrooms and cilantro and sweat in clarified butter.
Place all ingredients on pork loin and roll up like a jelly roll. Then truss the loin.
Sear the tenderloin on all sides.
Place in baking dish and drizzle olive oil on the top and sprinkle with salt, pepper and Italian seasoning.
Cover with aluminum foil and bake at 350 degrees until done, approximately 45 to 60 minutes.
