Pesto Tofu

Fresh basil wheat pasta and sauted tofu with a touch of cream"


tofu extra firm cubed & drained
1/4 cup olive oil
pasta of your choice
fresh basil
2 to 3 cloves garlic
2 Tbls. butter
2 Tbls,cream
salt & pepper
fresh parmesan cheese


In Cuisinart add two to three cups of fresh basil leaves and 1/4 cup olive oil two cloves of garlic. Saute tofu cubes in a small amount of butter and olive oil until light brown and crisp on the out side. Remove and set aside.
Cook pasta of your choice of four servings, (I like spiral wheat in this recipe). In pan you sautéed the tofu add remaining butter four to five Tbls. of the pesto mixture, cream pasta and tofu toss gently until coated and heated. Serve with a light amount of finely grated parmesan cheese optional.
