Shrimp Creole

A great low country recipe! Make it as hot or as mild as you like."

Ingredients

Shrimp Creole

2T butter
1 large onion, chopped
3 stalks celery, chopped
½ large green pepper, chopped
½ t ground thyme
1/8 t – ½ t cayenne (to taste)
3 cloves garlic - pressed
1T flour
1 – 16 oz can petite diced tomatoes
1 – 14 oz can crushed tomatoes
1/3 C sherry
2 bay leaves
Salt and pepper to taste
2 lbs raw shrimp, peeled and deveined


Instructions

Melt butter. Add onion, celery and green pepper. Cook 5 min with stirring add flour and all remaining ingredients except shrimp, bring to a boil. Turn heat to low and simmer 15 minutes uncovered stirring occasionally. Add shrimp, cover and simmer 10 min longer or until shrimp are cooked. Serve with Rice.
