Black Bean EnchiladasUser Submitted Recipe
1 can Black Beans
3 scallions chopped
½ cup frozen corn
⅓ cup cooked rice
½ cup salsa
½ cup canned diced tomatoes
1-2 tsp. Canned chopped garlic
¾ cup shredded cheese
8 flour tortillas
¼ cup enchilada sauce
Preheat oven to 350. Drain and rinse beans. In a skillet over med. heat soften scallions. Add garlic and cook for another 1 to 2 minutes. Mix in remaining ingredients and ¼ cup cheese. Spoon mix into tortillas and lay into casserole dish. Top with enchilada sauce and remaining cheese. Cover and bake for 20 minutes.
(If you desire a spicier version try adding a diced jalapano to the skillet with the scallions)
