1 Pound ripe Red and Yellow tomatoes
1 Red onion
4 Navel Orange's
1 pound fresh Mozzarella Cheese
Whole Fresh Sweet Basil (to taste)
salt to taste (optional)
Homemade Tuscan Vinaigrette
Homemade Tuscan Vinaigrette:
1/4 C. Olive oil
1 Tlbs. Balsamic vinegar
1/4 tsp. Dijon mustard
1 Tbls. sugar
1/4 tsp. salt
1/4 tsp. fresh garlic minced
Prepare vinaigrette. In blender add all ingredients for vinaigrette, blend on high 2 minutes.
Cut mozzarella into 1/4 inch thick slices, dice to bite size pieces. Slice both red and yellow tomatoes 1/4 inch thick slices, then into bite size pieces. Dice red onion into small pieces. Peel oranges and cut into 1/4 inch thick slices, then dice into bite size pieces. Toss cheese, tomatoes, oranges and sweet basil in large salad dish. Drizzle with dressing. Serve room Temperature.
