Cheesy spinach riceUser Submitted Recipe
1 bunch spinach leaves washed, drained or you can use one pkt of frozen spinach
1/2 cup grated cheese
1 1/2 cups basmati rice
1 or2 bay leaf
1 inch size cinnamon stick
1 green chillies
1" piece ginger
1 tbsp butter or any oil
1 onion slice into thin long strips
salt to taste
1 cup cabbage thinly chopped
1 or 2 pinch garam masala (optional, Only, If you want an indian touch)
juice of 1 lemon
1/4 cup milk
Wash and soak rice in water for 30 minutes. (optional)
Cook rice with cinnamon stick and bayleaf. and keep it aside.
Put spinach, green chillies and ginger in a cusinart food processor. Do not add water. The sustained water is enough for blending.
Warm butter or oil in a pan, add the garam masala powder and onions. Fry till they are light brown. Add cabbage, lemon juice, salt and spiach paste. Saute for 5 minutes.
Add the above fried masala to rice .
Add half cheese. Delicately blend the masala with rice till evenly mixed.
Transfer to a casserole, spread the rice.
Sprinkle the remaining cheese and the milk.
Bake for 15 minutes, covered with foil or cling film depending on the oven.
If you don't have time to bake, you can just add 3 tbsp hot milk and cheese directly to the hot rice.
