Taco Lasagna


8 oven-ready lasagna noodles
1 pound lean ground beef
16 oz. salsa
1 14.5 oz. can tomato sauce
1 package taco seasoning mix
1 cup frozen corn
1 15 oz. can black beans; rinsed and drained
4 cups cheddar and Monterey Jack cheeses, shredded
¾ cup crushed tortilla chips


Brown ground beef.
Add salsa, tomato sauce, and taco seasoning. Mix well.
Add corn and black beans.
In 9 x 13 pan, place a small amount of the beef mixture in the bottom of the pan (just enough to lightly coat the bottom of the pan).
Place 4 lasagna noodles in the pan, overlapping the noodles slightly.
Place half the beef mixture over the noodles. Top with 2 cups of the cheese blend.
Repeat noodle, beef, and cheese layers. Top with crushed tortilla chips. Bake at 375° for 45-50 minutes.
