Southwestern Casserole

A two-pan vegetarian dish."


1 can black beans
1 can corn
1 can diced tomatoes with green chilies
1 large potato
1 tsp cumin
1 tsp chili powder
2 garlic cloves, diced
1 tbs salt
1 tbs pepper
4 tbs olive oil
1 cup feta cheese


Cut potato into 1/2 inch cubes
Toss cubes in olive oil and lay evenly into greased pan.
Sprinkle potato cubes with salt and pepper. Bake in 450 degree oven until tender.
In large sauce pan, combine black beans, corn, diced tomatoes, cumin, chili powder, and garlic. Cook over medium heat until hot.
Divide potato onto two plates and top with veggie mixture and feta cheese.
