Roast Duck

Young roast duck in a cranberry/orange glaze "


One young ducking about 5 to 6 pounds
one pound cranberries
3 tablespoons honey
two tablespoons low salt soy sauce
2 ounces triple sec
one orange thinly sliced
one apple quartered
one onion quartered
sprinkling of 5 spice powder


Lift skin on duck and carefully slide orange slices under the breast
cook cranberries until a jam consistency
When cool, blend the cranberries
soy sauce, honey and triple sec together
add the onion and apple to the cavity of the duck after dressing the cavity with 5 spice powder
heat oven to 350
glaze the duck with the sauce and roast for about two to two and a half hours hours
