Amber's Capelletti Pomodoro

Yummy combination of fresh roma tomatoes, garlic, olives, mushrooms and parsley served over hot angel hair pasta. Bursting with flavor! Perfect for vegetarians or as a light lunch. "


1 lb angel hair pasta
8-10 large roma tomatoes, chopped
8 oz package of fresh white or cremini mushrooms, quartered
5 large cloves fresh garlic, minced
30-35 large black olives, halved
2/3 cup fresh Italian parsley, chopped roughly
1 tablespoon lemon juice
2 1/2 tablespoons balsamic vinegar
1 teaspoon red pepper flakes
black pepper
2 tablespoons virgin olive oil


Heat olive oil in large skillet. Place chopped tomatoes into skillet and simmer on med heat for 8-10 minutes.
Add garlic, salt and black pepper and simmer for 2 minutes.
Add vinegar, lemon juice, and mushrooms to skillet. Allow to simmer for 8 minutes.
Add chopped olives and parsley, red pepper. Simmer on med-low heat for 5 minutes.
Serve sauce over hot angel hair pasta and sprinkle a bit of the fresh parsley on top of each serving.
Serve with salad and warm garlic bread.
