Steph's Totally Awesome Chicken Salad
User Submitted Recipe
“
This is the best chicken salad! I get requests from friends all of the time to make it for luncheons and parties. It can be served with bread, crackers, or I prefer it as a wrap with thinly sliced cucumbers, Feta and crispy onions."
Ingredients
2 cans (12.5 ounces) cooked chicken breast (I use the White Meat Canned Chicken Breast from Costco)
1 red bell pepper, diced
½ cup onion, diced – may substitute green onions if you prefer
½ cup sliced almonds
½ cup golden raisins
½ cup celery, sliced
1 cup mayonnaise (or a little more depending on how moist you like it – I use light mayo)
1 tablespoon dill (or more if you really like dill)
1 tablespoon garlic powder
1 tablespoon onion powder
Instructions
Mix all ingredients together. Refrigerate and serve as sandwich filling or with crackers. I like to use it in a wrap with some Feta and crispy onions.
