Luscious Italian Amaretto & Cheese Pound Cake

Sweet Italian cheese flavored with Amaretto between rich layers of pound cake and topped with a lustrous chocolate glaze.


1Store-bought pound cake (I like Sara Lee)
¼ cup of Amaretto

1 cup mascarpone cheese
1/2 cup ricotta cheese
1/2 cup confectioners' sugar
1/4 cup mini chocolate chips
1 tbsp Amaretto

1/3 cup water
1/3 cup light corn syrup
1 cup sugar
8 ounces semisweet chocolate, chunked

Whipped cream
Toasted sliced almonds


Slice cake in half lengthwise.
Sprinkle 1/4 cup of amaretto on inside of cake layers. Set aside.
Combine next 5 ingredients. Spread over bottom layer of cake from edge to edge. Top w/upper layer. Refrigerate for 2 hours.
Meanwhile, combine water, corn syrup and sugar in a saucepan and stir well to mix. Place over low heat and bring to a boil, stirring occasionally to dissolve sugar. Remove from heat and add chocolate. Swirl pan so that chocolate is immersed in the hot syrup, then allow to stand 2 minutes. Whisk until smooth.
Pour over cake. Chill for additional 20 mins or until ready to serve.
Garnish slices w/whipped cream and sprinkle w/toasted sliced almonds.
