Powered up protein flax & soy chocolate chip cookies!User Submitted Recipe
1/2 c oats recommend: eat well be well “golden maple”
1 c soy flour
½ c flax meal
1/8 tsp baking soda
1/8 tsp salt (optional)
1/3 c cashew butter, almond butter, peanut butter or soynut butter
2 tbs apple sauce
1 c splenda
1/3 c vanilla or plain soy milk
2 tsp vanilla
1/3 c sugar free chocolate chips
1/3 c unsweetened chocolate chopped
1/3 c coarsely chopped almonds or pecans (optional)
1/3 c chopped prunes or dried figs
*also, a tablespoon of vanilla protein powder can be added for more protein!
Preheat oven to 350°F.
In large bowl, mix oats, flour, flax, baking soda & salt.
In mixer, mix nut butter, applesauce until well blended, stir in splenda, soy milk & vanilla.
Add wet misture to dry & stir with wooden spoon until JUST combined & then GENTLY fold in chips, nuts and fruit. Don't overmix or the cookies will be tough!
Roll about a tablespoon full into a little ball about 2" apart & bake until lightly browned on top. about 13-15 min. Try to let them cool 5 minutes or so before removing from sheets. Should be stored in a tightly sealed container, and can be frozen!
Cookies should be warm and gooey and stay that way! even when I put them in the freezer they are soft and yummy!
