Rhubarb Crunch

Great homemade recipe from my Mom's old recipe box! She loved to make this every spring when the rhubarb would finally spring its way through the ground. Tastes like SPRING!"


1 cup. flour
3/4 cup uncooked oatmeal
1 cup brown sugar
1 tsp cinnamon
4 cup cut up rhubarb
1 cup sugar
2 Tbs cornstarch
1 cup water
1 tsp vanilla


Mix first 5 ingredients together until crumbly. Press half of mixture increased 9" pan. Cover crumb mixture with diced rhubarb. Combine sugar, cornstarch, water, and vanilla. Cook until thick and clear, pour this over rhubarb. Top with remaining crumbs and bake at 350 for 1 hr. Serve with whipped cream or ice cream.
