Miss Lucy's Transparent Pie
User Submitted Recipe
“
A delicious, rich pie indiginous to the Mason County, Kentucky area. Similar to, but definitely NOT a Chess Pie. Much richer."
Ingredients
1 1/4 sticks Butter
2 Cups sugar
5 whole eggs
1 tsp vanilla
1 Tablespoon flour
Instructions
Preheat oven to 350 degrees. Cream butter and sugar—add 5 eggs and vanilla and beat well. Add 1/2 pint cream. Pour into 2 pie shells OR into 24 pudding (tart) shells. Bake until golden grown and the filling does not shake (Mom's words). During baking, the pies will puff up considerably, but will drop back into the shell as they bake and then cool.
