1 cup orange juice
1/4 cup sugar
1 Tablespoon corn starch
2 eggs beaten
2 cups milk
1/2 cup orange juice
1/4 cup craisins*
Powdered sugar (optional)

Heat oven to 350

In medium sauce pan place rice and orange juice. Heat to boiling stir once. Cover reduce heat and simmer for 15 minutes. All juice should be absorbed.
In medium mixing bowl mix 1/4 cup sugar, cornstarch. Add eggs, milk and orange juice to sugar mixture mix until smooth. Stir in cooked rice, and craisins* .
Pour into 2 quart casserole dish that has been lightly sprayed with non stick spray. Place in baking pan with enough water to rise two inches up the side of the casserole. Bake 1-1/2 hour.
