Chewy caramel apple cookies

2 cups flour
1 1/2 cups sugar
1 tbsp baking powder
1/2 cup dry nonfat milk
3/4 cups old-fashion oats
1 small box sugar free butterscotch pudding mix
1 cup diced raw granny smith apple
1/2 cup caramel bits
1 egg
1 tsp vanilla extract
1 6 oz jar banana baby food
Instructions
Preheat oven to 375 degrees. Combine flour, dry milk, sugar, oats and baking powder together and mix well. Add egg and baby food and mix until batter is equally moist. Add apples and caramel bits and mix. Place balls of batter onto an ungreased cookie sheet one inch apart. Bake in heated oven for 15-18 minutes or until edges and peaks are golden brown and crisp. Let cookies cool for 5 minutes before taking off the sheet. Makes 1 1/2 dozen cookies.
