Chewy Pecan Bars
User Submitted RecipeIngredients
1 pkg Yellow Cake Mix
5 large eggs
1 cup light corn syrup
1 cup dark brown sugar
1/4 cup butter, melted
2 cup chopped pecans
1/3 cup vegetable oil
Instructions
Preheat oven to 350 degrees. Grease a 13x9 pan. In a large bowl, combine cake mix, one egg and the oil. Mix until crumbly and press into prepaired pan.* Bake "crust" for 20 minutes...meanwhile...
In the same bowl, with mixer beat sugar, syrup, butter and the remaining eggs until well blended.
Stir in the pecans and pour over the prepared "crust".
Bake 45 minutes or until set. Do not over bake as this will cause your bars to be too chewy! Let cool in pan and then cut into bars and serve.
*Note: After my "crust" is baked..I take the back of a large wooden spoon and push it all down into the bottom of the pan. If you leave edges uncovered, they get hard. I also used baking spray on my pan. This makes it much easier to remove the bars from the pan. Another way to easily remove the bars from the pan is to spray the pan with Pam, then line it with Parchment paper and spray the Parchment.
