Choose your Favorite Fruit Preserves
1 Cup Sifted Self-Rising Flour
1/2 Cup Sugar
1/2 t. Cinnamon
1/2 Cup Quick Oats
1/3 Cup Shortening
1 Egg, Beaten
1/4 Cup Milk
3/4 Cup Favorite Fruit Preserves
Preheat oven to 400 degrees. Line a 9 X 9 inch square pan with foil. Spray with spray shortening. Sift together flour, sugar and cinnamon. Stir in uncooked oats. Cut in shortening until mixture is crumbly. Spread half of dough in bottom of foil lined pan. Pat down lightly, but do not pack. Spread preserves over dough. Drop remaining dough by spoonfuls over preserves. Bake for about 25 minutes. Cut into bars while still warm. Makes 18-20 bars.
