Mexican Wedding Cookies

1 c butter, softened
1/2 c powedered sugar
1 1/2 tsp vanilla extract
2 c all purpose flour
1/2 tsp salt
1 c old fashioned rolled oats (quaker oatmeal, not instant)
Instructions
PRE-HEAT OVEN TO 350 degrees
In a large bowl beat butter until creamy. Gradually beat in powdered sugar, then salt, vanilla, flour, and salt. When blended and smooth stir in oats. Shape dough into 1-inch balls and place on ungreased cookie sheets, about 2 inches apart. You can also flatten by pressing with fingers. Bake 18-22 minutes or until golden brown. While still warm roll in powdered sugar. cool on wire rack. Makes 2 1/2 to 3 dozen cookies.
