Southern Sweet Potato Cake

This decadently moist cake is typically served served in the South on New Year's Day. It just wouldn't be the same without it."
Ingredients
1 Cup Butter
4 Eggs
3 Cups Sifted Flour
1/2 t. Salt
1 t. Vanilla
1/2 t. Nutmeg
1/2 Cup Coconut
2 Cups Sugar
3 Cups Mashed Sweet Potatoes
2 t. Baking Powder
1 t. Baking Soda
1 t. Cinnamon
1/2 Cup Chopped Nuts
Instructions
Cream butter in a large mixing bowl with an electric mixer. Gradually add sugar and combine until light & fluffy. Add eggs, one at a time, and beat in. Add mashed sweet potatoes (okay to used canned sweet potatoes), vanilla and spices. Sift together the flour, baking powder, soda & salt. Stir in gradually. Fold in nuts and coconut. Pour into a prepared 9 X 13 inch pan. Bake in a pre-heated 350 degree oven for one hour. Cool and serve with whipped cream or frost with a cream cheese frosting.
