There is nothing that reminds me of my childhood more than these mint bars. I have seen them in various forms over the past years but this recipe is my family's. It is the love that my grandmother poured into making these every year, and the knowledge that christmas time wasn't complete without them. It is the old fashioned recipe card that my mom still has, written in my grandmother's handwriting, stained with the green food coloring used in the recipe. When the holiday season rolls around, there is a call out to my family members - who is going to make Grandma's mint bars this year? Who needs the recipe? These bars are the epitome of the holiday season: tradition, family, memories, remembering the one's we love, and the beauty of food as an item that binds all of those things together. They are decadent: chocolatey, minty, overly sweet and in just one word, perfect.
Grandma's Mint Bars
INGREDIENTS
Grandma's Mint Bars

Serving Size: One 9x13 baking pan

Layer 1: The Brownies

1 cup sugar
½ c butter, room temperature
4 eggs
1 tsp vanilla
1 cup flour
1 tsp salt
1-16 oz Hershey syrup can (Don't try and substitute this - it makes the recipe. They still sell the cans, normally near the ice cream aisle at the grocery store)



Layer 2: The Mint Filling

2 cups powdered sugar
1/2 cup butter, room temperature
2-3 tbsp milk
1 tsp peppermint extract
1/4 tsp green food coloring

Layer 3: The Chocolate

6 oz semi sweet chocolate, morsels or squares
6 tbsp butter
Instructions
Layer 1: The Brownies
1. Preheat oven to 425 degrees F.
2. Grease a 9x13 baking pan.
3. Beat together all the ingredients.
4. Pour into 9x13 pan and bake for approximately 25 minutes or until thoroughly cooked through.
5. Let cool completely.

Layer 2: The Mint Filling
1. Beat together sugar, butter, and milk.
2. Add peppermint extract and food coloring and beat again.
3. Spread on top of completely cooled brownies and chill.

Layer 3: The Chocolate
1. Using a microwave or double broiler, melt chocolate and butter together.
2. Pour on top of mint filling and chill.
3. Cut into squares and enjoy in the company of family and friends this holiday season.
