Cottage Cheesecase

Healthier version of the old fashioned cheesecake"

Ingredients

Prepared graham cracker crust

6 eggs, separated
3/4 cup sugar
1-1/2 lbs. cottage cheese
8 oz. sour cream or yogurt
juice and grated rind of 1 lemon
1/4 cup flour
1/4 teaspoon salt


Instructions

Blend cottage cheese separately to remove lumps; then blend with egg yolks, sour cream, half of the sugar, and other ingredients.
Beat egg whites and remaining sugar until stiff.
Fold into cheese mixture.
Pour into crust.
Bake 1-1/2 hours at 325 degrees.
Top with strawberry glaze and fresh strawberries or with other fruit topping.
