cocoOATnut macaroons

crunchy, chewy macaroon with just a hint of coconut and chocolate"


1 cup granulated sugar
1 cup packed light brown sugar
1 cup vegetable shortening melted
2 large eggs beaten
1/2 cup shredded sweetened coconut
1/2 cup finely chopped pecans
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 cup all purpose flour
4 cups rolled oats
1 cup chocolate chips


preheat oven to 375F. butter 2 baking sheets
in a large bowl, blend both sugars,the melted shortening, and eggs. stir in pecans, coconut and vanilla
in separate bowl, mix the soda,salt and flour. combine both mixtures. add the rolled oats 1 cup at a time and mix until the batter is stiff. drop by teaspoonfuls 2 inches apart on prepared sheets. bake until lightly browned, 12 to 14 minutes
in the meantime melt chocolate chips in microwave. pour into a baggie or piping bag with small hole, quickly drizzle chocolate over cookies to taste. I prefer just a little taste of chocolate.
