Carrot Halwa

Ingredients
Carrot Halwa
2.25 lbs carrots
1 quart of milk
1 teaspoon cardamom seeds (crushed)
3/4 cup water
3 tablespoons ghee or butter
2 tablespoons raisins
2 tablespoons almonds
2 cups of sugar
Instructions
Preparation:
Wash and grate carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts. Bring water to boil, add the grated carrots. Cook for 5-7 minutes on a medium heat. Add milk and cook on low for one hour. While cooking, add sugar. Keep stirring to dissolve the sugar. Cook until the milk is absorbed. Add butter or ghee and simmer for 3-5 minutes. Add crushed cardamom and raisins and mix well. Arrange in a serving dish. Top with nuts. Serve cold, hot or at room temperature.
