Chocolate MousseUser Submitted Recipe
1 pint heavy cream
5 egg yolks
1/4 cup sugar
1/4 cup water
1 1/2 cups semi sweet chocolate
Coarsely chop chocolate and place in a double boiler or a metal bowl over simmering water. The bowl should not touch the water.
Slowly melt the chocolate, stirring frequently, until smooth , over a medium low heat. Do not allow the water to boil as this will cause steam to get into your chocolate and it will "seize" up.
Separate eggs. Discard the egg whites or set aside for another use. In the bowl of an electric mixer fitted with the whisk, whip the egg yolks until very pale in color and a 4 second streak is visible.
While egg yolks are whipping, place the sugar in a medium sauce pan cover with cold water and place over medium high heat. Bring sugar water to a boil. Remove from heat.
Reduce the speed of mixer with egg yolks to low and gradually pour in sugar water. Increase speed to medium and continue beating until the bowl is room temperature to touch.
Gradually add melted chocolate.
Whip the cream until soft peaks form. Gently fold into chocolate mixture.
Pour into glasses or bowl and chill for several hours.
Garnish with additional whip cream and chocolate shavings. Hope you enjoy!
