Fresh Apple Cake

Delicious moist apple cake with glaze."

Ingredients

1 1/4 C cooking oil
2 C sugar
3 eggs
2 1/2 C all purpose flour
1 tsp salt
1 tsp baking soda
2 tsp baking powder
3 tsp vanilla, divided
3 C peeled, chopped apples
1 C chopped pecans
1 1/2 C powdered sugar
2 tbls water


Instructions

Pour oil in large bowl. Add sugar and eggs, beat well. Sift flour, salt, baking soda and baking powder. Gradually add flour mixture to creamed mixture. Add 1 tsp vanilla. Fold in apples and pecans. Pour mixture into prepared 10 inch tube pan that has been lined with wax paper. Bake at 350 degrees for 1 1/3 hours. Cool slightly on wire rack Invert into plate, removing wax paper.
For glaze, combine powered sugar, water and 2 tsp vanilla. Drizzle over cooled cake.
