mini blueberry cheesecakesUser Submitted Recipe
2 pkgs cream cheese 8 ounces each (softened)
2/3 cup sugar
1 tsp vanilla
1/4 cup sour cream
can of blueberry pie filling or fresh blueberry macerated with some sugar
combine cream cheese and sugar until blended mix in eggs sour cream and vanilla. Line 12 count muffin tin with cupcake papers and place vanilla wafer (flat side down) in each opening.
Spoon filling about 1/2 to 2/3 full.
Bake @ 375 for about 12-15 minutes or until set.
Mini cheesecakes will collapse slightly as cooling, then spoon blueberry pie filling or fresh blueberry mixture on top.
