Applesauce Cake with Cream Cheese Frosting

A very moist applesauce spice cake with creamy cream cheese frosting."

Ingredients

Cake
4c Flour
3 tsp baking powder
3/4 tsp soda
1/2 tsp salt
3/4 tsp cloves
3/4 tsp nutmeg
2-1/4 tsp cinnamon
3/4 cup shortening
2-1/4 cup gran sugar
3 eggs
3/4 cup water
1 cup raisins
3/4 cup chopped nuts(if desired)
Cream Cheese Frosting
8 oz cream cheese
1 tsp milk
1 lb confectionery sugar
dash salt
1 tsp vanilla


Instructions

Cake
In separate bowl place all dry ingredients. Cream together at medium speed of electric mixer shortening and gran sugar, beat in 3 eggs till very light and fluffy (2-4 minutes), add applesauce. At low speed mix in dry ingredients alternately with water just till smooth. Add raisins and nuts. Pour into 13x9 pan that is greased and lined with wax paper. Bake 1-1/2 hrs or until toothpick comes out clean. Cool 15 minutes then remove from pan, peel off wax paper and cool.
Cream cheese frosting
Blend softened cream cheese with milk. Stir in confectionery sugar gradually, add salt and vanilla and blend well. Frost cooled cake and enjoy.
