Mom's Pineapple Cheese Pie

My dad's favorite dessert
She was the best cook and baker ever. Even though she worked full-time, we always had a hot meal with dessert every night."


Pie crust in bottom of 9" pie pan.
1/3 C. sugar
1 T. cornstarch
1 C. crushed pineapple, undrained
8 oz. cream cheese, softened
1/2 c. sugar
1/2 t. salt
2 eggs
1/2 c. milk
1/2 t. vanilla


Blend 1/3 cup sugar with cornstarch and add pineapple in pot. Cook, stirring, until mixture is clear and thick. Cool.

Place softened cream cheese in bowl and cream it. Slowly blend in salt and 1/2 cup sugar. Add eggs, one at a time, stirring well after each egg. Blend in milk and vanilla.

Spread pineapple mixture into uncooked pie crust. Pour cheese mixture, slowly, on top of pineapple mix.

Bake in 400 degree oven for 10 minutes. Reduce to 325 degrees and bake for 50 minutes more. Cool before serving. Sprinkle confectioner sugar on top of cool pie (optional).
