Apple Pie

Mom Schmid's Apple Pie - Sept. 1973
My Mom will turn 83 on May 4, 2011 and has been a great cook since she was a teenager. She raised seven children now comes to our house most holidays where I do the major cooking and other families bring a dish to pass."

Peel and wedge 5 to 7 apples and slice using Cuisinart Food Processor. Feed wedges through round tube and use slicing blade. Mix 1/3 cup brown sugar, 1/3 cup white sugar and 3/4 teaspoon of cinnamon in large mixing bowl add apples and a teaspoon of lemon juice and stir until well mixed. For crust use Pillsbury pie crust and place one crust in bottom of 9 inch glass pie pan. Add apples, spread evenly and dot with 1 to 2 tablespoons butter - put on top crust and flute edges - slit crust in at least four places. Sprinkle a very small amount of white sugar on top of pie. Put on plate and microwave for 15 minutes in 5 minute intervals. Take off plate and put on cookie sheet and bake in 400 degree oven for 20 minutes. If crust is not golden leave in oven five more minutes. Should not have to leave in oven for more than 30 minutes total. The last one we baked we left in the oven for a total of 30 minutes and it turned out perfect.
