Lowfat Rejoice Cake


Healthy and Delicious!
This cake is a remake of a very fattening carrot cake, but it is now light and delicious!"

Ingredients

2 c. flour (can use 1/2 whole wheat)
2 1/2 t. baking soda
2 t. cinnamon
1 c. vegetable oil
2 c. sugar
1 c. soft tofu, drained & crumbled
1 (8 oz) can crushed pineapple, with juice
2 c. grated carrots
1 1/2 c. flaked coconut
1/2 c. toasted walnuts or pecans
1 (3 oz) pkg lowfat cream cheese
1/4 c. softened butter
3 c. confectioners sugar
1 t. vanilla soymilk


Instructions

Preheat oven to 350. Mix flour, soda, & cinnamon. Beat oil, sugar, and tofu til smooth. Add flour mixture. Beat until smooth. Add pineapple, carrots, 1/2 c. coconut, & nuts. Pour into 9x13 pan sprayed with cooking spray & bake 60 minutes. Cool then remove from pan. Frosting: Toast coconut. Cream together cream cheese and butter. Add confectioner's sugar and soymilk; beat until smooth. Add 1/2 the coconut & frost cake. Top with remaining coconut.
