Cannoli Cake


1 box yellow moist-type cake mix
1 1/2 pounds ricotta cheese
3/4 cups sugar
3 eggs
1 teaspoon vanilla


Grease & flour a 13x9 inch pan. Prepare the cake mix as directed on the box and pour into the greased pan. In a large bowl, mix all the remaining ingredients. Pour over cake batter. Bake at 350 degrees for one hour or until a toothpick comes out clean. Cool and sprinkle with sifted powdered sugar. Keep leftover cake refrigerated.
