Nanna Mae's Shortbread

My dear mother-in-law shared this with me.
Light and sweet shortbread that will melt in your mouth."


-1 lb sweet cream butter (no salt) softened at room temperature
-1 cup (heaping cup)powdered sugar
-4 cups all-purpose flour
-1 tsp vanilla flavoring


Preheat oven to 325 degrees
-Cream softened butter and powdered sugar together in mixing bowl.
-Add all-purpose flour slowly, in small portions as you continue to blend with Cuisinart mixer.
-Add in vanilla flavoring and mix into batter completing cookie dough.
-Using small fruit scooper, scoop up dough against side of mixing bowl, leaving a flat side on top of the small cookie dough ball.
-Release cookie dough, placing it flat side down on ungreased cookie sheet.
-Continue scooping and placing cookie dough on ungreased cookie sheet, leaving about 2 inches in between each cookie.
-Bake at 325 degrees for 20 minutes or until cookies appear VERY LIGHTLY browned.
-Remove from cookie sheet with spatula.
-Allow cookies to cool, and then you can serve or store them.
By using your electric mixer and a small scoop, you avoid breaking down the soft butter in the dough.
