Very Lemony Lemon BarsUser Submitted Recipe
The flaky crust melts in your mouth and the lemon topping has a zing which will make your mouth water. You can't just have one!!
Bars are best after being in the refrigerator or freezer!"
4 C Flour
1 C Powdered Sugar
1 lb + 4tbs (4 ½ sticks) unsalted butter cut into ½ inch cubes and chilled
3 C Granulated Sugar
¼ C Flour
½ tsp Baking Powder
7 large eggs, lightly beaten
Grated zest and juice of 4 lemons (I used about 6 or 7 lemons)
¼ C Powdered Sugar
Note: you could also add 1 C blueberries if you want lemon blueberry
Preheat oven to 350 degrees.
Lightly grease 17 x 12 x 1 pan.
Mix flour and sugar in food processor and pulse 2-3 times to blend. Add cubed butter and pulse until mixture is a coarse mean and begins to stick together. Remove and form into a big ball.
Flatten dough with floured hands and press evenly into bottom about 1.4 inch up the sides of the pan.
Bake 12-15 minutes until light brown but not quite done.
Mix sugar, flour, baking powder in bowl and set aside.
Mix eggs, lemon zest and juice –wick until smooth and well blended.
Sift the flour/sugar mixture into egg mixture and stir until well-blended.
Pour filling on top of crust (sprinkle even with blueberries if using).
Bake 30-35 min. at 350 degrees until set.
Cool for several hours before cutting.
Dust with powdered sugar and cut into bars.
