Easy cheesecake bars

Simple, tasty, and easy. Prep time is about 15 minutes. No special cheesecake pan needed and you can serve as small or large portions that fit your needs."


1 1/2 cup Prepared Graham cracker crumbs
1/3 plus 4 dots of butter
1 1/4 cup granulated sugar
2 tsp of pure vanilla extract
3 eggs room temperature
1 cup sour cream


Take 8x11 glass baking dish and melt the butter in a microwave. Take Graham cracker crumbs and 1/4 cup of sugar and mix and pour on top of the melted butter that is the glass pan. Dot with a bit more butter.
In cuisinart standing mixer beat cream cheese and 1 cup sugar using paddle attachment at no six speed.
Add room temperature eggs one at a time. Lower speed to three and blend in sour cream and vanilla. Spread on top of the Graham cracker mixture in pan.
Bake at 350 degrees for one hour and ten minutes. Turn oven off and leave oven door ajar leaving the cheese bars in the oven for another hour.
Remove and chill for an hour or longer.
If you want, spread a thin layer of cream cheese over the top and bananas or strawberry preserves or any topping you wish to use.
