Matcha Green Tea Cake

This cake is light and not too sweet with a hint of green tea taste. The matcha green tea whipping cream adds to the fabulous taste."


1-3/4 cup flour
1/4 cup cornstarch
2 teaspoons Matcha Green Tea Powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1-1/4 cup sugar
3 eggs
1 cup soy yogurt
1-1/2 teaspoon

For glaze: (optional)
1 cup powdered sugar
1/2 teaspoon vanilla
3/4 teaspoon Matcha Green Tea Powder
1 tablespoon hot water

Whipped cream garnish: (optional):
1/2 pint soy whipping cream or heavy whipping cream
1 cup powdered sugar
1 teaspoon vanilla
1 teaspoon Matcha Green Tea Powder


1. Preheat oven to 350F and grease 2 round 9” pans with nonstick spray.
2. Beat eggs and sugar together. Add in yogurt and oil, followed by vanilla continuing to mix well.
3. Sift in the flour, cornstarch, baking soda, salt and matcha green tea powder.
4. Divide batter into pans and bake 22-26 minutes or until an inserted toothpick comes out clean. Let cool completely before decorating.

If using the glaze: Beat ingredients together and drizzle on cake. For whipping cream, whip ingredients together and garnish as desired.
